You will get this through natural progression of the story. No need of grind out once the Story mode is over. You will also have an abundance of cash and SP.

Agreed. As a point of reference, I'm about halfway and I just hit lvl15.

Every time you finish an event you earn a little bit of cash and some XP so the further you progress through the story, the more XP and cash you will earn for a victory (even if you have already won the event before). Every time you level up, you earn some skill points which are used to learn new stunts. You will easily reach level 20 before finishing of the game so no reason to worry about this trophy.

When you finish an event, you will earn some XP the better you do in an event the more XP you will get. As you progress on with the story you will earn more XP for winning events as well. You should hit about level 15 halfway through, so there should be no need to worry about grinding this out at the end as it will come naturally.
