Just start the game on legend from scratch, It is not as hard as it seems, the bosses are tougher, but overall it's easy and you will get also another difficulty achievements, they are stackable

What made is achievement super hard is that if you die on hard mode your game will often go to normal difficulty and block you from getting the achievement since you need to complete the game from start to finish on hard difficulty. And just beating the final boss on hard doesn't work.

The difficulty achievements are stackable and Legend is not very difficult, so simply set the difficulty to Legend in the Options Menu before you start the game. Once you have done that do not touch this option again and play the game. When you finish the game you will get all three achievements.
