To catch the boomerang just throw it and tap the block button

just before it hits you. Same principle as when you would try to parry an enemy attack.

When you find a boomerang, pick it up and toss it. When it flies back at you, hit Block just before it hits you to catch it. The timing is about the same as the Parry's, the boomerang has to be about half a body in front of you when you block so you catch it.
