This was by far the hardest boss fight for me, but watching the video below helped me finally defeat Ken:
Using this technique--running to the corner, facing away from Ken, and using a backwards attack (Y button) and if possible opportunistically stomping Ken while he's on the ground--allowed me to finally defeat Ken after about 50 (frustrating) attempts. PixelPath suggests using Riki, because his special LB/RB+Y attack does more damage, and that worked for me too. It seems that Ken does fewer special attacks when you're in the corners, which is convenient as well.
