You could probably submit this as the whole game walkthrough here on the site with some minimal additions.

Hmmm, for some reason this didn't pop for me. Replayed the chapter 8 boss but still nothing. Hate to replay this whole game just for this - maybe I'll get lucky and it will unlock overnight.

Pretty straightforward, there is a boss at the end of each of the chapters that you have to defeat and this one will pop.

Each level has a main boss that can be beaten fairly easily with your most powerful ranged weapon. Use a powerful melee weapon when you need to. Use the dodge roll when possible and clear out the waves of little enemies when needed. There are parts of the battle where he weakens and you can deal close to double damage, so pay attention to those moments.
