Most of the levels have short cuts you can learn as you play the level over and over again. BUT this video (not mine no creds) shows some pretty sick short cuts. The key to most of them is simple. Ram an object and mash 
which can allow you to have a quick double jump. The video will show you how to beat some of these levels with a minute or more to spare.
You have to watch the video on youtube because the user disabled third party sites. It will lead you there if you click on the option.
If anyone finds easier tricks to completing these then please comment below and I'll add them to the guide. Hope it helps you as much as it helped me.
For China I highly recommend the first short cut only. I found the others hard/unreliable but the first jump to save time was enough to end 15s before cut off.
Same thing for Planet of the Monkeys but you will have 30-40s to spare.
