Falling Away from Me on bass is very simple. If you want to take a longer road, Heading Out to the Highway on bass is alright, it's very long though, you can also get the hit combos all the up the "Lucky 777", leaving only the maxed out combo left.
All of the songs in the first disc should be simple 100% for most experienced Rock Band/Guitar Hero players. We're Not Gonna Take It is probably the easiest. Note that this will stack with the Song Aced achievement if it is not already achieved when an Expert 100% takes place.

I got it with bass on Dirty Little Secret. Only took a few tries.

"All The Small Things" by Blink-182 on Expert Bass. It follows a simple pattern:
1 & 2 & 3 & 4 &
It does not ever deviate from this, so simply tap your foot for each number. For instance, the opening note will be a red single followed by a green long note. This rhythm would be counted:
& 4..., where the & = Red Note and the 4 = Green Long Note
The next notes will be blue, and on the first note, you should start tapping your foot, bring it up on the second note, and bring it back down on the third note. You just counted:
1 & 2, where the 1 and 2 have your foot on the floor and the & has your foot in the air.
Continue with this method, even when there is no music, just keep a steady pace with your foot.
By counting like that, you'll be able to play much easier. This is the actual method used by musicians, especially in school bands/orchestras. This can be applied to most songs.
I can work out the counts/taps for you if you need it for a song, just message me.

On drums, I would reccomend doing Blitzkrieg Bop, We're Not Gonna Take It, or Pain. Blitzkrieg Bop would be the best because it doesn't have as much notes and isn't that long
