Ships are unlocked by leveling up. Each time you level up you alternate between unlocking a ship and a skin. So the first time you level up you'll unlock a ship, the second time a skin, etc.
You gain XP from winning matches. The fastest way to gain XP is to play deathmatch with four controllers. Use one controller to speed around and get your 10 kills as quickly as possible to end the match and get more XP.
Obviously this is best saved for after you've gotten all of the other miscellaneous achievements. Only then should you grind out XP in deathmatch.
