There are 11 characters in total and you must unlock them first (see relevant achievement for each character).
In the options menu set a match to one game and a game to 7 points.
This means that a tournament of 4 games should take at the most 15 minutes.
So with 11 characters and 11 tournaments this should take around 2 1/2 hours approx to complete.
If you are going for the Veteran achievement, you could set the matches to have more games and 21 points per game.

do you have to beat one tournament with all eleven characters, or can it be spread across different tournaments?

Hi there, its been a while but you have to play and win 11 tournaments - one tournament with each different player. Hope this helps.

If you’re going for all of the other achievements, just beat the 4 circuits on default settings with 4 different characters. If you’re going for the Savant, you’ll get this achievement on your way to beating the All-Star circuit with every character. Note: you do not have to use default settings to achieve this.
