This isn't as bad as it may seem. Just need to collect all 1,008 stars coins in the game. Might be easiest to collect as you do each mission rather than waiting to mop up afterwards.
I did not do this however and it started off as guessing where my missing stars were. Therefore, I suggest the following:
Do an E-Sports Speedrun! In each mission just go looking to see if you find a star coin. Usually the star coins are in your path and not particularly difficult to see. Did this once and finished this up at the end of the run. In addition, I used the run to collect some of the horns, stashes, and jumps I hadn't done yet.
As a side note, the starting point of missions is not always at the end point of the previous mission. Therefore, the are occasions when you might have to go out of your way a little to make sure you hit the originally intended path. To work around this, consider crashing at the end of a mission. When you respawn, you'll begin at the start point for the next mission.
Keep in mind there are a few coins hidden behind a tree or pole, but for the most part they aren't really hidden.

Part of the difficulty can be explained as follows:
When you start the run, as soon as you finish a mission, you don't actually start the next mission from it's starting point. So it might seem out of the way for some missions because you're not following the original track/path. In that case, I might suggest immediately crashing in order to start each mission at its origin.
