What you need to do to perform an Up and Under is use the X button. Try kicking to an area that is close to the try zone and fairly empty. Also when kicking try to get the ball into the try zone so you don't get tackled from behind like I did several times. Once the ball is in the air hit the LT to change players and attempt jumping for the ball with B. It will take a few tries to time it but as long as you recover and the computer teammates don't, you should get the achievement. Let me know if you have any questions.

Do you have to catch it, or can you get it off a bounce?

You have to catch it before it hits the ground, at least that's how I got it

Whilst in possession of the ball press 
to perform an up and under kick. Run towards the spot where it will land, and press 
to jump. If you get the ball, which you should run and score the try.

To get this achievement you must score a try after recovering an up and under kick, this is performed by holding 
with the ball in hand, to get one of your players to jump in the air to catch the ball press and hold
.
*Note: Must be done on Medium or Hard difficulty.
