Probably easiest way to do this: Go to RXC gamemode, Time Trial, Peeler Cup. Just drive a lap bit cautiously as you should stay on track all the time, after finishing lap choose Quit, achievement should then pop. You don't actually need to get Gold medal, I got achievement with Bronze medal.
