Easiest way ever. Get to a high level, and then try for this when you are cleaning up challenges and getting golds on every level. I did it as a lvl 37 warrior. I simply consumed a Rage Potion and then hit 'em with a lvl three Power Attack (B-button). It one-shotted him. BAM. Achievement Unlocked.
For stats, I had highish attack (28) and low power (8). Who knows, I could have gotten lucky with a critical. Should be achievable with any high-level class, but I only tested the warrior. As I understand it, the mage even hits harder with their power attacks. The key for me was the Rage Potion, which amplified my damage significantly.
Also, I don't think weapon selection matters for this all that much, as I was using weak weapons to get my score Challenge for the level.

Just to add something to the first post if your are plaything this online the achievement only pops if you are the host as me and a friend discovered today.

Level three special attack with the archer also seems to be overpowered. My character is just rank 32 and by pressing B i easily killed the mini-boss in 1 hit. And the nice thing with the archer you can keep your distance from the mini-boss.

I leveled up to level 34 and had the strongest weapons I could find (level 5 add-on pack each weapon around the 299-300+ range) before i got to the mini boss I equipped all three red crystals and made sure level 3 was maxed out and when i walked into the mini boss area I used a rage potion then the (B button) attack and it was a one hit kill it also popped the It's over 9,000!!! Achievement at the same time.
