"Ride a panda"
In Osaka castle, there are two "stables", one is the regular stables while the other is a panda seller. You can buy a panda for 120k gold. Then just equip it and ride it in any battle or exploration mission. If you wish to just have the achievement and not waste gold, you can make a save before buying it, earn the achievement, then reload the save.

In Osaka Castle, if you go to the South West of the map, you will find a mount salesman who is different than the usual one. He will be selling a Panda mount for 120,000 gold. Buy the mount, equip it, then enter battle to pop the trophy. If you are having trouble saving this much gold, wait until after you have collected all of the accessories so you have a lot of items, meaning you can always save your game, sell everything you own (it will easily be enough) get the trophy, then reload.
