This is pretty simple, you want to go really fast around some loops or twists. I like series 3, mission 2 (Directed Energy) for this as you have plenty of stuff play around with.
I essentially just built up, then spiraled back down with booster track. If you're having trouble staying on the tracks you can slightly twist the tracks using RT/LT, though it seems you get more G's keepng it flat. A wider loop will also help build more G's. That's all there is to it, check out the video to see what my track looked like.

And for the record, I made a tight spiral first with a 75 degree slant and never went above 5G's.

Ah ok, I had trouble keeping the coaster on the tracks with it flat, i'll update my solution though :)
