Very easy to do on Series 3 Demo 1 "Full Tilt".
You will get to use the rocket coaster for the first time, simply launch off the track and immediately hit the boost button. The coaster will fly into the water on the far end of the map and achievement should unlock.
Make sure to watch the full flight until it automatically switches to the next launch, it doesn't appear to unlock if you skip it.
