This is not as hard as it sounds. When you are stoped to see a 2 enemies saying you're too late. These are 2 engineers. One drops turrets and the other mechs..it will clearly say Vehicle engineers...he will most of the time drop off the ledge and start running to plant a mech( this is what i saw on hard ). Hit him with everything you got. If you hear mech deployed you can still get the chevo. Untill the mech drops on the ground the kill should still count.

Playing in the easy setting (one star) in the chapter Prejudice (probably in the third checkpoint), you'll receive the task "Defeat Engineers". All you need to do is to kill the Vehicle Engineer before he deploys his Mech (a.k.a. giant robot), using the Assault Rifle with Slug Rounds and the Crash Pack Detpacks it'll be really easy to kill him in time, just keep shooting and throwing him the explosives (and of course pressing A to do they explode). I photographed him dead, check it:

In the final level, Prejudice, you will start out in a tank. Get past this point and make to the part of the level where you’re objective is to clear out the enemy. After this a cutscene will occur and two Arm of Orion members will confront you and your squad. After the cutscene you will have to fight them but here’s the tricky part, you have to keep your gun pointed at them long enough to figure out which is the Vehicle Engineer and which is the Deploy Engineer. Once you’ve indentified the Vehicle Engineer take him out immediately, don’t even worry about the Deploy Engineer. My Tip for this trophy is to play the level on easy, and to have the shotgun with incendiary ammo. 4-5 shots will take out the Vehicle Engineer and the trophy is yours.
