There are 16 characters to beat, 8 of which you will beat in Singles matches when you unlock them via singles tournaments. You must also beat the 8 characters that are already unlocked at the start of the game. You will beat some of these as you play singles tournaments in Superstars mode, or you can play them in straight singles matches from the main menu in case you miss any.

you dont have to unlock them to get the achievement. Just beat them. Some characters you may play in tournaments in the game without unlocking them. For example i played shadow in amy rose's tournament to unlock her.

This achievement will come by going through SuperStars mode and defeating all the characters. If for some reason you didn't beat them all in Superstars mode, then just play a quick match against all of them once you unlock all 8 hidden characters.
