This achievement is the easiest to do in the superstar mode, in the mission where you have to use powerups to kill zombies. Collect the "Triple Ball" power up, and whack a ball toward a hoard of zombies, I got it my first try, but if you don't get it, just keep picking up the "Triple Ball" powerup every 3 balls and trying again...

This achievement can be done in Superstar mode, in the Curien Mansion stage. 4th mission, Use the Power-Ups is the best mission to get the achievement.
Pick up either the Big Shot, or the Triple Ball power-up and back up as far as you can. Wait until the Zombies are just about on top of you and unload on them.
I found it more reliable to get it with the Triple Ball power-up, but both work like a charm.
With Big Shot, hit once to clear a path to the middle, and then hit again to get it into the middle of the horde.

For this you have to play the Curien Mansion level in Supstars mode. Unlock the 4th mini-game, called Use the Power Ups. Once you begin, you will have a choice of three power ups to pick from. Choose Big Shot which is the large tennis ball, then just wait for the zombies to get real close to you near the bottom, and then start swinging. If you aim it correctly, you should get 8 in one shot. If not, keep trying this level over and over until you do.
