How to unlock the One with the Jungle achievement in Shadow of the Tomb Raider - Definitive Guide
Just a quick FYI...
You can absolutely still get this achievement by selecting 'One with the Jungle' difficulty (which sets Combat, Exploration and Puzzle difficulty to 'Hard') and then lowering ONE of these three difficulties to 'Normal'.
If you lower just one, you will see that the overall difficulty remains at 'One with the Jungle'. If you lower more than one, the the overall difficulty lowers to 'Rite of Passage' and will obviously void this achievement.
On my first play through, I lowered the Exploration difficulty to normal, to make collectible hunting and overall path finding a little easier, keeping combat and puzzle difficulty on hard.
When I wrapped up Lara's adventure, this achievement popped along with 'Rite of Passage' and 'Smart and Resourceful'.
EDIT: According to the comments thread on the Deadly Obsession achievement guide, this achievement also unlocks when you complete the game on the hardest difficulty, Deadly Obsession. i.e. All difficulty achievements stack.

This is an excellent tip. I unlocked it with the Exploration difficulty on normal as well.

Nice tip. Cheers. Didn’t know that you could change one of them as normal. For me, the combat would be better if it was normal, as I’m fairly good at exploring. There’s an index list of pages containing all of the collectible locations listed at: https://tombraiders.net/stella/walks/TR11walk/collectibles/ (Index)
The page has lists of pages and those pages contain the locations, maps and screenshots of every collectible in the game including the DLCs. I hope that guide helps those who are struggling trying to find the collectibles on harder difficulty playthroughs.
