As the description suggests, just kill 2500 enemies. I needed to start a second playthrough in New Game + mode and the kills accumulated.

This is fairly straightforward and should come naturally over the course of your first play through towards the end of the game, some of the final few chapters have a lot more enemies to kill which should boost up your total count significantly. Shaman's continuously spawn enemies until they die so if necessary, you could delay killing the Shaman for a while and just focus on killing the enemies, increasing your kill count.
