How to unlock the Learn to Fly achievement in Shantae: Half-Genie Hero - Definitive Guide
For starters this is easily the hardest achievement in the DLC and quite possibly the hardest in the whole game to date (IMO OFC).
Now this achievement requires you to maintain a single attack bird of the Character Sky in the air for 60 seconds. Sky is the Bottom Right Girl with the birds. Now this may sound easy but the birds automatically come back to you and this will reset your timer for that bird. It is best to do in a large straight area with no enemies. I recommend the first level at the very beginning. Start off with clearing your 'runway' by killing the 3 crabs along this path.
Start at one end of your large 'runway'. You'll want to head in the opposite direction. Now you'll need to press the button facing the opposite direction you plan on running. Then immediately begin running in the direction you planned on. Once the bird is within a few centimeters of you, you'll need to quickly jump over it. This will cause the bird to essentially loop around you to try to land again. You'll begin running again in the same running direction always and then repeat over and over. You'll need to do this for 60 seconds. It will take a lot of practice to get the timing down. It took me nearly 2 hours +. The achievement will pop immediately at around 1 min 5 seconds (probably achievement delay not coding), so don't stop until you hear the bloop! Good luck!
I was only getting about 45 seconds consistantly with my above method so I contacted the developer and they basically said the same thing I did above. In case I didn't lay it out well, below is included what they said. One part of their comment leads to me believe if you're absolutely struggling, perhaps it will get nerfed a bit. Who knows!

If you're struggling with this still, TA member HUN playmore has evidently discovered an apparent out of bounds glitch that you can utilize to get this achievement.

You need to dodge a standard attack bird - throw it out in a location with space and no enemies and you basically need to dodge it whenever it comes near you. It’s is more challenging then I intended when I wrote that one but 30/45 seconds was too easy when we tested it out. 60 seconds is just too long so it’s harder to maintain a good dodge pattern to keep avoiding it.
Nothing really I could say that would help too much but I always approach it as the bird flies towards me, jump over it, and then move back and then jump forward again (and repeat this pattern for 60 seconds) as if I’m trying to jump rope. If the bird comes down at an angle, it is hard to recover. If you accidentally glide, it is hard to recover. - ChampionOfLight

We did want to give each character an achievement and had a few alternatives achievement options for each. The final one we picked for Rotty is the most likely one a player not intentionally going for an achievement would likely get (the head throw is quiet effective). The Bolo one, although not impossible by any means, is unlikely to be obtained during a normal playthrough if you aren't specifically going for it (his grapple attack is not useless against enemies but it also isn't too effective against them, either). And the Sky one is specifically obtained by players going for it and would not be unlocked just by normal play as no scenario really asks you to do anything like it.
Once it was decided that it would be an actual challenge based achievement for Sky we wanted to ensure it had a fair amount of challenge to achieve so we settled on 60 seconds after 45 seconds proved to be easy. Multiple testers were able to obtain this achievement/trophy at 60 seconds so we left it at that number,
For anyone attempting to get this naturally - I, personally, felt it was a lot easier for me to get when I used the d-pad and not the stick.

There are always people who effortlessly do any achievement but this achievement is borderline impossible for the average player IMHO. Luckily a guy called Vern3 on PlaystationTrophies found a glitch which makes this obtainable for anyone. I don't know about the linking policy, if you go to the forum you will find it under Half Genie Hero. I can confirm it works the same on Xbox One as well.
On a side note I refuse to believe this achievement or the DLC was properly playtested. If not for the achievements I would have dropped it so far halfway I would never find again. Completly out of place and extremely punishing compared to the base game and all the dlcs.
