How to unlock the Arc of Iron achievement in Shovel Knight: Treasure Trove - Definitive Guide
I thought originally I earned this from killing one enemy; the bubble blowing dragon found in the first level "Plains". However after further investigation of a theory I had (and assistance from other TA'er's), it has been confirmed that the bubbles the dragon blows are classed as enemies.
This means that by using one anchor you can destroy one group of 3 bubbles blown by the dragon and earn this achievement.
Thank you to ParallaxDG for suggesting just to use the bubbles (rather than 2 bubbles + kill blow on dragon) and Greenshell48 for confirming that just the three bubbles will earn this achievement.
This is probably the best enemy to use for this achievement. As long as the dragon stays alive (it takes 7 hits on the head so a few accidental knocks with the anchor won't kill him) he will continue to blow bubbles which means if you don't get it right the 1st time, you can keep trying until you get it. It also means no having to swap between screens to get enemies to respawn because you didn't get the right angle on the throw
If you do happen to kill the dragon while trying for his achievement, he doesn't respawn so the easiest method is just to quit and replay the level (he is just after the second checkpoint I believe so not too far into the level.)

I found the easiest way is to just fire an anchor and destroy the 3 bubbles, easier than killing the dragon + 2 bubbles.

So you're confirming that you got the achievement by destroying the three bubbles the dragon blows?

First off, I suggest going into options and switching your relic activation to Button mode so that you only have to tap to use relics rather than having to use the left thumbstick/d-pad and button combo. It makes the entire game much easier IMO.
You can get this achievement extremely easily against the first dragon enemy on the first stage, Plains. Simply wait until it spits 3 bubbles at you that are close together (which is almost every time), and toss your Anchor relic at the bubbles. Since the bubbles count as enemies, popping 3 of them with one anchor toss will pop this achievement.
In the interest of creating as much of a one-stop-shop as possible, I've included 22 of the miscellaneous achievements in Shovel Knight in the video below. You can see Arc of Iron as well as Reflected Richs at the 02:03 mark.

There is an area within the Stranded Ship that is perfectly set up for this. After climbing up a ladder, just past a Checkpoint and through a screen transition, you will see three hammer throwing enemies lined up perfectly in an arc on a series of ladders. One toss from a Throwing Anchor will easily nail all three.
Alternately, you can return to Pridemoor Keep, to the area with the large number of Propeller Rats, and lure a group together before tossing a Throwing Anchor.
Please see the trophy Relic Roundtable for a video.
