The big treasure chests are the large blue ones you see at various locations around the game. To open them you have to wait until you get the strength upgrade for shrek which you receive after finishing the swamp.
Simply open one of the two possible big chests at the ogre camp straight after getting the above, and the achievement is yours.

I believe the first time you will be able to get this trophy is during the Dragon’s Keep level, since only then do you have the necessary ability. In any event, you will have to open up all the big (and small) treasure chests in the game to get the platinum.
