Really simple in multiplayer with a dummy controller or a buddy. Set the dummy controller as the humans and yourself as whoever you want. Have your main account build an outpost, while the dummy account sets up in a gold reservoir and builds a workshop. From the workshop, have them build a blimp and then aim it at the main account's outpost(s). Do not charge the blimp at all and then fire it. It will fly very slowly at the outpost. On the main controller begin firing bombs or boombas at it (depending on which character you are). A direct hit will destroy the blimp in one hit and pop the achievement. If you miss you will simply have to wait until the workshop can make another blimp. Good luck and happy hunting!

If it helps, it only seems to work on the way down. So if your TNT goes up and appears to be on target, it just goes through the ship. Only when it was on its way down did it seem to connect. This means trying to hit at very close range is harder, so don't be afraid to have a wee bit of distance when trying to get it. When I aimed from a distance, it was much easier and got it first attenot, as opposed to many fails at close range. Also I did it on local with turn taking, rather than real time, so it was easy to align the shot.

I got this one on the third level which is swarming with air units, fairly simple trial and error. If you see a air ship on the way, put an outpost right where the airship is going to be so you can be better with aiming rather than trying to triangulate the perfect shot.
