To fight Adam at his most powerful you must banish all other bosses except chanel (once you defeat a boss they will crouch down and you will have a choice to redeem them with LT (DON'T!!). Instead you should continually hit them 'till they vanish. Now you must ONLY redeem chanel with the LT. Once you do this a cutscene will occur and the heart in the midde or the Hub will turn blue. Enter the portal and engage Adam. Good luck and happy hunting.

I just wanted to clarify this, you CAN defeat and redeem Chanel first and then banish the remaining bosses as she can be quite difficult near the end.
For the boss himself, I actually found him significantly easier than the normal Adam fight. Only running heavy attack (with the 2hand sword) after he does his shield charge. When he swaps to his 2hand (~60%), try to always stay far from him and keep with the same running heavy after he does his 2 vertical slashes. You can also get a bit of damage in with spears when he stands still with the big black aoe around him.
He had no other phases once he went into 2hand mode, so no worries about new tricks at low health.
