This is way easier to do than I thought but I hadn't been paying attention to the deflect mechanic in the game during my first playthrough.
This has to be done using the dash and certain items (bonuses are somewhat random on equipped items, but I found Cloth Boots and Gladiator Sandals to add some benefit) will enhance your dash ability to deflect projectiles back at the enemy. The Deflect Damage perk increases your deflection damage by 150% making it quicker to get kills. Having dash recharge perks (Springy Knees or Head Over Heels) on can make it easier to get more dashes in. The Winged Boots trinket can be turned on in the main hub area before a quest to give you a fourth boost in-game.
Certain enemies in the game will shoot fireballs, arrows, or homing energy balls at you. You should be able to dash straight into these to send them back to the enemy that launched it. Usually a few of these will kill your attacker. I found that the best enemies were the crawling enemies in the 4th section of the game (Sorcerer's Castle) as the lob 3 purple/pink energy balls in your direction that cast a circle on the ground before they explode. If you dash through these, it should lob them back and the do a lot of damage. This is ideal if you have a mob chasing you, you can sometimes rack up a lot of additional kills this way. Since this is cumulative across all quests and your New Game+, you should easily nab this achievement well before hitting 50 completed quests.
