There is a way to do this that doesn't require other group members to also perform the contract work and turn in the contract before you get the achievement progress for it.
Normally if you hop in a group, then start a contract and finish the work, all the group members need to return to the contract holder to turn it in before it completes, which can be like herding cats with the randoms most times.
Instead, find and start a simple contract solo while not in any group, complete the contract up until the point you need to turn it in, go stand in front of the merchant you need to hand the contract in to, and then look through your local server list inviting random people to your group. Once somebody joins, quickly turn in the contract (before they leave) and it won't require the other player to do the same, and you'll get achievement progress. Seems contracts started while solo can be handed in solo, but contracts started as a group must be handed in as a group.
I've found this method worked for me for 3/5 of my group quests so far and I'll be doing it for the other two, hope it helps you as well!

This method still works. I was only able to get it to track when I turned in quests immediately after forming the party, and never from any location I had to fast travel back to. But you only need to get 5 random people to accept your invite, so it's not bad.

You must complete contracts/quests when you are in a group. I don't know if it makes a difference, but I was the leader when I unlocked my achievement, and there was only one other player. There doesn't need to be 3 players.
