You can do it by yourself like i did just assign the other player slots as bots in an xbox live match its really not that hard.. To do so:
1.) go to Battle Mode
2.) go to Player Match
3.) go to Create Public Match
4.) press "X" to choose either Iceburg or Village level
5.) press "Y" for setup and go over to the right circle and press "A"
6.) move curser to left and choose CPU and press "B" when done with that
7.) then go left twice and press "A" to set up the rules (quickest would be set to type: Lives and 1 life
8.) press back twice after that and choose your character and press start... After match is over the achievement will pop!

+1! on this solution. Worked with no difficulties. However, I would suggest adding in the steps to get to this match for people who may not know much about the game or even don't know how to do this. I will just go ahead and list the steps and if you want you can just copy and paste them to the solution if you'd like or not, completly up to you, just wanting to help out.

Very easy to get. Go to Battle Mode. Then Player Match. Create Public Match. Press X to pick level. Choose either Iceberg or Village. Press Y for setup. Change the time to 30 seconds. Sign in with another Xbox live account if you have one. If not you will have to find someone to play with. Complete the 30 second fight and everyone gets the achievement.

actually, you can just set the second player to a com and play through the match and you'll still get it. All the cheevo asks for is that you host the match.

is there a prerequisite to getting this? I cannot find the iceberg or village levels in MP

Host a game online and when someone joins, choose the Iceberg of Village level. Once you have done that, start and finish the game.
***Note - The people who you play with must have the DLC as well
