After struggling with these for a bit, I looked up some vids and found that the key thing here, is to avoid drifting entirely. The speed you get from drift boosting doesn't make up for the speed you lose drifting in the first place - just drive normally, take turns/corners as tight as possible, and use your three boosts wisely. Some tracks they can just be used whenever, but avoid using them on top of boost pads as they don't stack and will just go to waste. Other tracks, boosts can be used to cut corner or help with tricky turns, such as the turn on Chaos at Gargamel's where you drive on a shelf right in front of him - if you struggle to make the turn, just hit the wall, position yourself, then boost to get back up to speed.

Obviously take all the shortest paths, some of these might be trial-and-error figuring them out. On Flourescent Caves, avoid the bubble paths entirely, they're bait. On some tracks it might LOOK like you need to drift boost (looking at your Forest Rollercoster on Fun speed), but trust me, it doesn't help. I Gold medalled all of these with just normal driving, drift boosting only ever slowed me down overall.
