Dead-eye Targets are Stone Eagles which can be hidden anywhere in the game, even outside the map. You collect the Stoneeagles by destroying them with any weapons. There are 3 Stoneeagles in each mission (24 total for the achievements - DLC Stone Eagles are currently not needed for the achievement)
I will post here a full 100% collectibles video guide which also incl all optional objectives, kill target challenges and some level specific achievements. In addition, I have created a map for each mission where everything is marked. Sniper Elite 5 has over 150+ collectibles. All maps / missions are really huge and you can go to nearly any point at any time. There is no order but I tried to find a logical path along the story objectives each time. All collectibles are immediately saved.
For better overview, I hide everything behind spoilers, so you can unfold the spoiler, which you need. All mapnumbers match up with the timeline in the video.

Note: As DLC missions are released, the requirements for this achievement will not change. If you destroy any dead-eye targets in those DLC missions, they will count towards this achievement, so this may unlock earlier than expected.
