You need to choose a puzzle level. Kick a box with A then stand where it was and press X to undo and the box will knock you over. Repeat 20 and 30 times for the achievements

It's kick a box with x and undo with b.
I read another guide here which says kick with A so maybe an update has changed the controls? For me right now it's X kick, A jump and B to undo

In the open world section of the game there is a bunny doing the puzzles. Just stand in front of the block he is pushing and get hit by it and you will get progress towards being hit by cargo and being kicked at the same time. You can also keep kicking the blocks to get progress for the kicking achievements too.
