You need to choose a puzzle level. Kick a box with A then stand where it was and press X to undo and the box will knock you over. Repeat 20 and 30 times for the achievements

In the open world section of the game there is a bunny doing the puzzles. Just stand in front of a block he is pushing and you will get hit by it and get progress towards being hit by cargo and being kicked at the same time. You can also keep kicking the blocks to progress the kicking achievement too.
