For this achievement and the additional other 5 achievements in this update that requires you to purchase car bodies to purchase car bodies is directly to your right as you spawn in get into a car drive to the station and select one you can’t upgrade more than one at a time so hop out and grab a blank one if you run out just go back to the main menu
However this can get expensive if your someone like me who was just a little short you can load up the first level and keep kicking the same box into a corner do that until you have enough saved up just make sure you click SOS and not go back to the main menu as that will get rid of all the kicks that didn’t save

The other day when I bought my 4th car body the "4 Car Update" achievement didn't unlock. I had to buy a 5th car body to get that one to pop. So now I owned 5 car bodies but only had the "4 Car Update" achievement.
I wanted to portion these achievements out for the ongoing Leap Frog event.
I tried to "shake something loose" today by switching between all the car bodies I owned like GTukC described. I even did so first on my Series X and then booted the game up on my One X and repeated the process. Didn't help.
My achievement trackers for "6 Car Update" and "7 Car Update" were 66% and 57% respectively. I forgot what it was for "5 Car Update" but it was 80-something.
Eventually I bought my 6th car body and the "5 Car Update" popped. I also noted that the trackers were still 66% and 57%. Was pretty worried at this point that I would be left without any means to trigger an unlock of the "7 Car Update".
So, I pressed the guide button and went to Home. Without quitting the game I went to "Manage game and add-ons" and deleted my local console save. As many of you are familiar with this forces the game to close down and when you boot it back up and you don't have a local save then your cloud save is downloaded instead.
In this version of the save file I still hadn't bought the 6th car body (because it seems that buying car bodies and even exiting the shop with "Done" doesn't trigger an auto-save by the game). So I went and bought it and "6 Car Update" popped. Annoyingly the tracker for "7 Car Update" still remained at 57% so I wasn't sure what to do and ended up repeating the above process with the saves.
Finally bought the 6th and 7th car body and thankfully the "7 Car Update" achievement also unlocked.

I could only buy 6, going back with a new forklift it says that all 7 are owned.

and drive it on to the white circular pad with a picture of a forklift on it that's right next to where they are parked. On the right side of the screen is "Car Body" where you can use the arrows to select one you haven't bought yet and buy it. You can then select the next Car Body and buy it, until you have bought 7. Sometimes the cursor wouldn't show up to select a different Car Body until I drove off the pad and back onto it.
