Sonic & All-Stars Racing Transformed

This is a very easy way to get the achievement and only takes a few minutes. First, you'll need 2 controllers. Make sure you've pressed start on the second controller while in the Main Menu. Then, from the Main Menu, select Custom Game, and then choose Local.

Next, you want to choose Battle Arena, as there won't be any AI racers in this event. There should only be Player 1 and Player 2, so there won't be any distractions. Choose any characters and track you want. I did this on Neon Docks.

First thing to do when the match starts, is you want to collect the glove as Player 1, so keep collecting boxes and until you've got one.

NOTE: Make sure your account is signed in on the first controller, the one that will be using the glove.

Once you have the glove, do not activate it yet. Pick up the second controller and then collect the RC Car, as it's easier to use because it locks onto your opponent.

Once Player 2 has the RC Car, get behind Player 1. Now Player 1 can activate the glove, and then Player 2 to fire the RC Car at Player 1. If done correctly, Player 1's glove should catch the RC Car. Now you can use Player 1 to get behind Player 2 and fire the weapon back at it. If it hits, the achievement should unlock.
