For this, I waited until I had a Fireworks and a long straight while an opponent was behind me. Then launch the weapon backwards (LS down + A) and hold X. achievement unlocked.

(I assume this works with any backward-fire capable weapon) - confirmed

Edit: LS down not necessary, holding X has the same effect

I can confirm that any backward-fire weapon does work. I've tried it with other items, such as the blowfish and the ice shot, the latter being what I used to earn the achievement as I was able to nail Tails with an ice-shot for the achievement.

And you don't have to hold the left stick down, just hold down x and then hit a and it will automatically fire backwards.

This is possible in a local battle with a second controller to make it even easier.

Very easy to do. Grab a snowball or rocket and hold down the button and fire at a C class bot for an easy hit. Best pulled off on battle mode on world tour or even just setting up a second controller but you should be able to get this easily anywhere.

Hold the button to look behind you. If you have Ice, this should be a breeze. Wait until a racer is directly behind your tail then hit . Trophy unlocked. You can do this with a second controller too.
