How to unlock the Flying Low achievement in Sonic Colors: Ultimate - Definitive Guide
To unlock Super Sonic, you need to obtain all 7 of the chaos emeralds.
To obtain each chaos emerald, you need to beat the appropriate "Sonic Simulator" stages, which you can access from the Sonic shaped ship on the top right of the Zone Select screen.
To unlock all of the Sonic Simulator stages, you need to obtain all 180 Red Rings.
As you need 180 Red Rings to get all of the emeralds, I wouldn't bother with Sonic Simulator you've collected all 180 and then just do them all in one go - should take you less than half hour.
Each Sonic Simulator stage is pretty easy - most stages can be completed in <1 minute. Score/rings do not matter; you do not get a rank at the end of these stages, nor do you get or consume lives. You just need to beat the stage. There are three stages per zone.
One you've finished all of the above, simply play a stage, collect 50 rings, transform into Super Sonic with RB (or whatever you've assigned to the 'activate wisp' action) and beat the stage without your ring counter draining to 0.
Having Super Sonic eliminate the need for wisps and gives you unlimited boost essentially making you an all-in-one creature. If you're struggling to S Rank Terminal Velocity, Super Sonic makes it a case of simply holding Boost down until the end of the stage. In short, It is worth unlocking!

Mine wasn't working until I went into Settings, chose Super Sonic and hit LB, thought I was going to have to replay the whole game.

Once you collect all 7 Chaos Emeralds from Game Land, you will unlock the ability to transform into Super Sonic. To do this, you must first collect 50 rings in an Act. You will then be notified that you can press to transform. After that, simply proceed through the level while making sure to maintain Super Sonic form and finish the Act to obtain this trophy.
Small Note: For some reason I tried obtaining this trophy on Sweet Mountain Act 1 and it did not pop. I then tried Tropical Resort Act 1, and the torphy unlocked as intended. If you are experiencing difficulties, try that.
