Quickest way to do this is reach any fishing portal, and farm tokens you can trade those tokens in for unlimited resources for each island. This is very time consuming.

Collect a Blue Seed of Defense. LOTS OF THEM. Then go to the Hermit Koko to deliver them and upgrade your Defense.
If you haven't already maxed out, you can do this extremely easily in Final Horizon's Another Story (the DLC). When you get to play as Sonic again (after playing through the first part of Amy, Knuckles, and Tails' stories), wait for a Starfall then collect all of them like mad. Instead of Fishing Tokens, you will earn multiples of a Koko, Blue Seed of Defense, or Red Seed of Power). The amounts given are vastly multiplied, so you can potentially max out at least one stat from a single starfall if you collect enough of a given item. It may take more than one starfall, but it is still faster than collecting single items like normal.

The max level for Defense is 99. You raise your defense level by finding defense seeds and giving them to Hermit Koco to upgrade your Defense attribute. Defense seeds can be found throughout the Starfall Islands such as after performing a Cycloop, inside containers, after defeating enemies, and after completing challenges. Alternatively, you can obtain defense seeds by exchanging fish tokens to Big the Cat at any of his fishing spots. This is a good way to max out quickly without grinding too much, but may not be an option until near the end of the story since it requires purple coins. It will require approximately 300 seeds to max your Defense Level. If you are choosing to utilize fish tokens for this, use the Southern Fishing Spot on Ouranos Island since it has the best catches for obtaining large amounts of fish tokens.

Of the four stats, improving Power and Defense are the easiest. Power is improved with the red seeds you'll collect, and Defense with the blue seeds. Once you collect them, you need to head to a Hermit Koco to turn them in, and he'll improve the corresponding stats automatically.
You'll find that, if you're going for the completion, you'll collect tons of red and blue seeds naturally. As you explore each island and work toward completing all challenges to fully reveal your map, you'll get many red and blue seeds. You already get one guaranteed from each challenge you complete, and you'll get more from enemies, Guardians, and breakables. Personally, I was in the mid 70s on both Power and Defense by the time I finished everything else. To get whatever last bit you need, use the fishing method described in Hypersonic Hedgehog (15G).
