All credit goes to a user named Signess, I found his list on the gamefaqs forum. Finding the red star rings earns you artworks, music and also new skills you can unlock.

Videos suck . Having to replay certain areas because they just skip around the stage without showing you exactly what path to take at some areas.

The problem is that the Stars are usually hidden in a way that you're forced to take different paths inside of each level. That's why they skip so much in the videos.

No, you can find them any way you want to. Sadly, there's no real indication which stars you already collected. But you can see the stars displayed above the stage entrance and the ones not collected yet are sort of invisible-greyish. This way, you can see that for example you don't have collected the very first star in the level (I hope that helps because I really have no idea how to properly explain that, lol).

Red Star Rings are in-game collectibles you must find in each stage. There is 10 per stage, 5 per Act meaning in each stage Classic Sonic and Modern Sonic both have 5 Red Star Rings they need to collect. It would be very recommended that you complete all of the Challenge Acts as noted in the roadmap before grinding out any missing Red Star Rings as the skills received through those Challenge Acts make hard to get Red Star Rings easier to obtain. Here each of these Rings will give you new items that count towards (Hedge)Hogging It All Up!. Please refer to this link for the locations of all the Red Star Rings SadFaceGaming11's Red Star Ring Video Guides or under each individual Stage restored trophy where they will be embedded.
