This didn't unlock for me. I left Shadow as the last emerald, doing everything else in the right order. Guess I'll have to replay the game

yeah, sorry. A lot of people have been having that same problem where the achievements don't unlock. Until a patch comes, I'm not sure what to tell ya

Collecting all the Chaos Emeralds will happen naturally as you defeat all the above bossed and progress through the story. Once you have defeated all the Hedghogs and Egg Dragoon you should have this trophy.
