Launch any of the games (other than Sonic CD for some reason) in anniversary mode. Within the game, upon pressing start, you will be offered a character select. If using S3&K, press up/down to cycle characters on file select. Select Knuckles and at any time during gameplay, press and hold jump again whilst in the air to have Knuckles glide

I couldn't find the character select for Sonic 3 either. I only see it in Sonic 1 and 2.
Edit: Never mind, I was being dumb. In Sonic 3 you push up or down when selecting a file to pick the character.

Knuckles can glide by holding 
after jumping. Simply do this once at any point to obtain this trophy. There is a Mission that requires Knuckles to defeat enemies by gliding through them, so you can get this naturally as you try to S rank missions.
