How to unlock the Ring Collector achievement in Sonic Origins - Definitive Guide

This will be obtained naturally through play, I unlocked it before finishing Sonic 1 via Story Mode

Rings are added to this total as you collect them, and progress is saved each time you pass a level or a star post (checkpoint). Losing rings has no effect on this achievements progress

There are lots of Rings everywhere in all games. Just play whatever game on whatever level and it shouldn't take long to unlock. You can also spawn them in debug mode. Refer to the roadmap for accessing debug mode in any of the games.

Note that you will make massive progress towards this while trying for Lucky Hedgehog (10G). I earned around 500 rings in that one achievement alone. Don't bother grinding this out or spawning ring containers until you've done everything else.

This will come naturally since rings are abundantly found throughout all of the games here. This is shared across games and playthroughs so simply keep playing until you have collected 1000 rings. If you are playing Story Mode, you'll likely get this while still in Sonic the Hedgehog or probably early in Sonic CD.
