The best chance for a demon to give you a gift is upon learning their final skill, and this should come naturally if you're reguarly leveling and fusing your demons (which you should be doing to get stronger demons and if you're looking to 100% the demon compendium).
What I have been doing (got this around level 30-ish) was always equipping a new demon until I maxed their skills (which happens in a few of their levels) and then equipping another new demon. Once all or most of the demons in my stock were maxed out skill-wise - noticeable by the red badge next to their name/icon - I would head over to Victor in Cirque du Goumaden, register* all my demons and fuse more powerful newer demons. As you can see, the goal is to keep getting new demons to fill your compendium and unlock even stronger demons, rinse and repeat.
*Registering is so that you can customize your fused demons with skills already taught.
