Just win the 8 fights in Easy and the achievement will pop.

Select 'Battle' then 'Arcade' with the difficulty setting at 'Easy'.
Select Raphael as your character and whilst in the match hold Right on the D-Pad and press Y, Y, Y to perform a combo and keep doing this until your opponent is at the edge of the stage. At this point perform a grab (X+B) to ring him out.
Keep doing this until you finish all 8 stages, the clear time to attain gold is 6'00"00 and using this method you should complete in about 4'36"00. This will also unlock:
