Ecstatic mood is the farthest right, light green box on their profile. For this achievement you must get 5 spirits to ecstatic mood at least once. They do not have to be there simultaneously.
The “Stoked” achievement has a great list of all of the spirits’ favorite foods, likes and dislikes. I kept a running tally on my phone once I witnessed a spirit reach ecstatic.
When you have Atul, Alice, and Gustav in happier moods at the same time it can make this achievement easier as they all play music that can improve the mood of multiple spirits.

I have six currently and it still won't pop, this is worrying me. If I go through the entire game have all of them ecstatic once and that one also doesn't pop.
