How to unlock the S2 | Flyin' High achievement in Spyro Reignited Trilogy - Definitive Guide

Right where you start, drop down to the ground and charge into each of the four snowmobiles travelling around the ice boulder. This will leave the hang gliders frozen in place, which you can then mop up by flaming them.

As soon as the level starts, you’ll notice the Hang Gliders in the air. These guys are attached by a rope to the Snowmobiles. Instead of using your Flame on the Hang Gliders, fly down, land and start to defeat all 4 Snowmobiles first.
