As a text guide, there are enough speed boosts per lap so don't go for the crazy ones that are far to the side. You have to collect the rings to continue the race.
Achievement will unlock immediately after you have used 4 speed boosts so no need to finish the race.

In this video I will show you how to fly through 4 star speed boosts in one lap on the map Mushroom Speedway.

Once you start the level, Sparx will ask you what challenge you’d like to take part in; choose “Race the Butterflies.” There are a total of 5 Blue Star Speed Boosts you can hit within one lap and 3 laps to attempt this. So if you miss two, then you’ll need to try again. The Boosts are all obvious and only one is not in-line with the main race path.
