When you go to start a new game, you can put the game type as ‘CUSTOM’.
You’ll then be presented with different customisable options for your preferred gaming experience
Set the following options:
Job Rewards - High
Job Deductions - Low
Job Bonuses - High
There are also plenty of other options you can customise to your liking to assist in making life easier.
These settings allowed me to earn the achievement for Earning $10,000 from freight contracts, so you should be able to get all of the ‘earning’ achievements from freight contracts using this.

Multi-trailer jobs that involve other skills (fragile, valuable, hazardous) are the way to go. A 5 or 6 jump trip can earn up to 20.000 XP this way.
