How to unlock the Execute Order 66 achievement in STAR WARS: Battlefront Classic Collection - Definitive Guide
This achievement at the moment is quite buggy, but to obtain this you need to be on the Battlefront 1 game.
First thing to do is go into options > game options and make sure instant action heroes is ON.
From there back to main menu > single player > instant action and choose Bespin: Platforms.
This map is quite straight forward, two sides with one narrow passage through the middle.
You can choose either side, but I had more success pushing heroes with the republic rocket launcher, but you can also use the CIS rocket launcher too. You ideally have to try and hunt down where the opponents hero is, but should not be too difficult, the issue comes in luring him closer to the edge and having it count.
Despite multiple attempts it would not register, but after a forth time, it just randomly unlocked mid-game. So keep trying it and eventually it'll unlock. I also have a video showing how I did it exactly.

Can confirm, very buggy. Blasted Dooku off a few times with no luck yet

This one wasn't actually as bad as I was afraid it would be. Turn on Heroes in Instant Action in the main menu Settings section, load up Bespin Platforms Instant Action, Clone Wars, and play as the Separatist Assault droid, the one with the Rocket Launcher and the mines. Capture the center Extractor Command Post, and kill the clones. Mace Windu will be in the vicinity, and it it isn't too difficult to lure him out of the hallway tunnel with the ceiling and towards you out in the open command post. Use the mines and hit with the rockets to move him around and towards the map edges. It only took me a few direct rocket hits and him walking right into a mine to send him flying off the map edge.
I noticed that the cheevs in BF1 don't always pop onscreen but the Achievement still unlocked and my Gamerscore increased. Once you've sent Windu off the edge and if the cheev doesn't pop after a minute or so, just pause and pop open the dashboard to see if it unlocked. It did for me.
The reason to play as the Separatists instead of the Republic is because Windu is a lot easier to avoid than Dooku, and because you have the droidekas on your side.

Just a heads up, I believe that you have to kill a Jedi, not just any hero!
I got this achievement on Bespin Platforms. I put the difficulty on easy, turned on Instant Action Heroes, and turned off friendly fire (all from the options on the main menu).
From there I spawned in as the Arc Trooper (with the rocket launcher) and rushed the middle until I saw Count Dooku. I shot him off the map with the arc trooper but I didn't get the achievement. I then turned on Mace Windu and shot him off the map as well, and the achievement popped immediately.

Battlefront 1.
1. Main menu - Settings - Game settings - Straight into battle - heroes (on).
2. Main menu - Single player - Straight into battle - Bespin: Platforms.
Most likely, the era and the side do not play a role. I chose the era of the prequel episodes and the CIS side (droids). I took a droid with a bazooka and started shooting at my own Count Dooku. In the end, he did not even fly off the platform, but they gave me a trophy.
