I find AT-AT to be more difficult to hit in the correct spot, so you can do the same on Rhen Var Harbor playing as CIS (Droids).
Spawn and just walk to the Republic Walker, it’s closer than Imperial on Hoth.

Turn the invincibility cheat on and shoot the rocket launcher at the "neck" area on an AT-AT four times and boom the achievement is yours!

Strange. I unlocked veteran, elite and legendary achievements for this, but not the one time wonder 🤷♂️🤷♂️
Edit: Just go back in and get another one, finish the battle and it should unlock.

A Demolition medal is awarded for getting 4 critical hits with a Rocket Launcher in one life (SithMetalord is correct, these need to be done consecutively. You will get the Demolition popup for getting 4 critical hits if you get them in one life, even if not consecutive. However it will NOT count for your total towards getting Demolition career medals). For each of the Battlefront 2 medals, you can only get one per life, so you will need to throw a thermal detonator at the ground and walk over it to reset the medals each time. This one was always the hardest for me to get in the original Battlefront 2, mainly because 2005's internet didn't have the guides that it does today. Luckily I played so much of this game that I memorized all the critical hit spots for each of the ground vehicles.
You will need 4 medals to get to Veteran status, 32 to get to Elite status, and 64 to get to Legendary status.
Be sure to set up your game to have no enemy AI, and no friendly AI, that way nobody will be in the vehicles moving around to kill you or mess up your shot. Something very important to note is that you CANNOT quit the match you are in. You must complete the game, victory or defeat, for your medals to count to your career stats. You could in theory knock out all 64 medals for legendary in one match if you set all AI to 0 per match then quit if you just want the achievement, but then you won't have the permanent unlock at the start of each match. I'd recommend doing it in small chunks at a time. In that case, if the AI is set to 0, just go around and cap all command posts so the game will end, and it will add the medals to your career total.
Do not lock onto a vehicle, it will almost never hit a critical hit spot. If you hit the critical point, the vehicle usually will instantly explode (AT-AT and AT-TE excluded), no matter how much health it has. Also 3rd person is the best way to aim. I find that with the AT-AT method, sometimes when you don't zoom in with RS, it will aim assist you away from the critical point, so stay zoomed in.
Below is a pretty comprehensive guide onto all the critical hit spots for each ground vehicle (sorry if I miss one, I can edit it in! Easiest ones IMO are the AT-AT and Armored Tank Droid)
1. AAC-1 Hovertank (main Rebel tank that has twin rocket launcher blocks on top) - Black coolant tanks on the each side of the tank.
2. AAT (main CIS tank) - rear panel behind tank (side note, I believe that the function of this on the tank is like a walkway out)

4. AT-AT (walkers from ESB) - the neck connecting the head to body
5. AT-RT (small Republic walker) - small cylinder just below the cockpit and between the legs of the walker. (Difficult to hit)
6. AT-ST (tall Empire walker from ROTJ Endor part) - the block section on the underside when you face the rear of the walker.
7. AT-TE (beetle tank from AOTC and TCW) - the elongated section on underneath the tank, best angle is from the front of the ship below the turrets.
8. Droid Transport (CIS gunship equivalent, space battle only) - panel on the rear underside

For some reason this achievement got glitched for me and the game let me unlock the "Veteran demolition" achievement before this one. To solve this, I had to restart the game and follow the guide LtGenSpartan wrote; I suspect the game expects the player to nail the 4 critical hits in one sitting to unlock the achievement, even though the medal is shown if the 4 hits were not done consecutively.
